How hot can it be during delivery before my enzymes are no longer active or work?

Delivery days even during higher heat wave earth temperatures should not affect our digestive enzymes. Digestive enzymes naturally found in liquids tend to deactivate around 118ºF, but in dryer foods, they stay active until around 150ºF. Encapsulated digestive enzymes, because they are dry and further protected from air and high humidity, are unaffected by the lower range of those temperatures. The literature shows that food and microbial enzymes do not become completely inactive until 79.4ºC (174.9ºF).
